5 Two-Ingredient Microwave Recipes For The Freshman Night Out

When you’re staying up all night, either studying or binge-watching House of Cards on Netflix, you always crave something delicious. So here are five simple, two ingredient recipes you can make to accompany you on your night out.

Chocolate truffles

Step 1 – Microwave one portion of your chocolate in 30-second bursts until it melts. Go for any chocolate you like; dark, semisweet, milk — everything works.

Step 2 – Whip the cream cheese to a smooth consistency.

Step 3 – Mix in your melted chocolate with the cream cheese mixture. You can also mix in some add-ins if you prefer. Nuts, flavoring, peanut butter, lemon or orange zest — they all work.

Step 4 – Make small balls of the mixture, shaping it like truffles. Refrigerate for at least 1 hour to set.

Step 5 – Melt the other half of your chocolate and dip in the truffles in it. You can add vegetable shortening or honey (if you’re using bitter chocolate) to give your melted chocolate a glossy finish.

Optional step 6 – Decorate with sprinkles or lemon or orange zest for extra color and flavor.

Classic hot chocolate

Step 1 – Heat the milk in your microwave.

Step 2 – Scoop in a generous amount of Nutella into the milk and stir well. Reheat, if necessary.

Optional step 3 – Add a scoop of whipped cream or handful (or two) of marshmallows.

Devour – Drink up. Savor every sip.

Banana-oats cookies

Step 1 – Mash and mix in one ripe banana with a cup of oats.

Optional step 2 – Include any add-ins you like: Raisins, roasted nuts, chocolate chips, etc. It’s your call.

Step 3 – Make cookies out of the mixture, place it them on a plate and microwave for about 3 to 5 minutes.

Devour – Bite into your gooey and heavenly cookies. You can also bake these cookies.

Nutella – Rice crispie treats

Step 1 – Melt Nutella in a microwave in 30-second bursts. You can add butter for extra gloss, but it’s not necessary. If you’re feeling fancy, you can also melt some marshmallows.

Step 2 – Spread the rice crispies in a large tray and pour the melted Nutella (you can also use any chocolate if you don’t have Nutella. But seriously, who doesn’t have Nutella?)

Step 3 – Let it cool in the refrigerator, and once set, cut out the treats in any shape you like.

Devour – Here’s the real energy bar that helps you get through the night!

Peanut butter cups – the classic candy – recreated.

Prepare – Line a muffin tray with cupcake liners. Or if you don’t have a muffin tray, use mason jar lids to hold the cupcake liners.

Step 1 – Melt chocolate (or Nutella) in a microwave in 30-second bursts.

Step 2 – Add in one tablespoon of melted chocolate into your cupcake liners. Leave it in the fridge to set.

Step 3 – Take your muffin tray from the refrigerator and spoon in some peanut butter on top if the set chocolate. Be careful not to let the peanut butter reach the sides. Refrigerate to set.

Step 4 – Melt more chocolate and add another tablespoon on top of the peanut butter. The chocolate should cover the peanut butter entirely, so go ahead and add another spoon of melted chocolate if necessary. Refrigerate.

Devour – Remove the cupcake liner from your candy and bite into your very own peanut butter cup heaven. Guaranteed to keep you awake all night!

There’s no harm in indulging when you’re up all night working hard. Just make sure you don’t over-indulge. What other midnight treats do you enjoy?
